This amazing zindia is the sweetest summer squash I’ve ever had. The sweetness comes from nectarines and tomatoes and zesters that create a caramelized sauce. If I had to describe it, I would call it a mixture of sweet potato with some sort of chile, but it isn’t chile, it’s just one of our favorite summer squash varieties.

The zindia is a hybrid of two varieties of zucchini, called zucchini yellow (a.k.a. zucchini daikon) and zucchini brown (a.k.a. zucchini spaghetti). This is one of their most tasty varieties. It’s also one of the most difficult to grow. It’s a hybrid of the yellow, green, and brown varieties.
